This oven roasted curry cauliflower recipe is so easy and delicious! It’s my new favourite way to enjoy this cruciferous vegetable. Cauliflower has so many health benefits such as helping prevent cancer, improving your heart health, fighting inflammation, boosting your brain health and it is full of vitamins and minerals such as vitamin C, B-vitamins, magnesium and potassium!
So why not try incorporating more of this veggie in your diet?!
1 head of organic cauliflower
Fresh garlic or garlic powder
Coconut oil or grape seed oil
Preheat your oven to 350 degrees
Chop your cauliflower in to bite size pieces
In a mixing bowl drizzle coconut oil or grape seed oil to coat cauliflower (These oils have a high smoke point so are best for baking)
Sprinkle on sea salt, black pepper, garlic or garlic powder, turmeric powder, curry powder or any other spices you enjoy! (I don’t measure my spices as I find a couple dashes of each usually does the trick )
Mix everything together
Spread on a baking sheet covered in parchment paper or on its own…the oil ensures that it won’t stick
Put in the oven and set your timer for 15 minutes
After 15 minutes, take the cauliflower out, flip it and return to oven
Check quite frequently as you won’t want to overcook it. Golden brown is the colour it should be when done.
I usually leave mine in for about 20-30 minutes
