Is there any better way to spend the day than making chocolate? Not only is homemade chocolate incredibly delicious, it’s free of refined sugar, unhealthy fats and other binders and fillers, and is super healthy, packed with essential fats, antioxidants and minerals!
We recently joined Shar at the I Love Health Store to make some amazing raw chocolate! Needless to say, it was an hour and a half of chocolate bliss. The class was tons of fun and very tasty as we sampled pieces throughout the class.
We learned how to make chocolate with cacao butter, cacao powder, and yacon syrup (*we’ve made it before with maple syrup as well as honey, but yacon syrup was a great option to try. Plus, it is low glycemic, can boost metabolism, and contains prebiotics – prebiotics feed probiotics!).
Cacao butter and cacao powder are from the cacao bean. When it’s spelled like ‘cacao’ it’s raw, meaning it hasn’t been exposed to heat (or heat over 115˚ F) and has higher amounts of enzymes, antioxidants and minerals compared to ‘cocoa’, which has been processed through heat, which reduces its nutrient content.
To make different flavors and varieties of chocolate, you can add whatever you like! Dried fruit, nuts and nut butters (e.g. peanut butter, almond butter), spices, oils and seeds are fun to add. A pinch of high quality sea salt is also great to include for extra flavour.
In the raw chocolate class at I Love Health, we made a peppermint bark and a fruit/seed bar with dried figs, dried cranberries, and pumpkin seeds.
